On Saturday (21.09.2019), in Public room, the event “Degustation of traditional food” was held. This event was organized by ARNO in cooperation with Generator from Vranje for the purpose of preparing Western Balkans Cookbook.
At the event the skilled young chefs from Coolinari (students from the VET School “Lazar Tanev”) prepared traditional dishes from the Balkan region, that were later served in an open event for everyone to taste. There were about 60 participants present and the menu consisted of; ‘ajvar’, ‘selsko meso’, ‘galicko meze’, ‘turlitava’, ‘makedonska salata’, ‘secenica’ and other traditional dishes. Besides the presentation and degustation of traditional food, the participants had a chance to hear more details about aims of this project and to socialize with the guests.
This event is part of a larger project “Gastronomic Map of the Western Balkans” aimed at Mapping out the regions where there is a traditional preparation of Balkan dishes. The project is implemented in cooperation with “ARNO” – Skopje, “Generator” – Vranje, “KFIC” – Gjilanje and “Bona Fide” – Pljevlja, with the support of the Western Balkans Fund.
The project presents atypical categories of locals who preserve local gastronomic traditions, such as those done by the young chefs, high school- Lazar Tanev as part of the Coolinari Project, or as done by female professionals and high- educated women, victims of domestic violence, rock’n’roll fans, as well as typical preservationists of tradition – women active in minority women’s associations.
In addition to cooking workshops and public tastings throughout the region, this project will result in the publication of a cookbook, 8 cooking videos and 5 postcards with maps of 4 specific dishes: ajvar, goulash, strudel, pie.
